  • Grilled quail, gratin, broad bean, green raisin gel
  • Half shell scallops, pumpkin, pepitas

  • Barramundi, heirloom carrot, ginger, creme fraiche
  • Beef oyster blade, bone marrow crouton, shallot, horseradish
  • Chicken, speck, brussel sprout, oyster mushroom
